Fall Baking

I love fall baking! Pumpkin, squash, cranberries!


Carrot-Squash Muffins

1/2 cup (ish?) turbinado sugar
1/2 cup apple sauce
1/8 cup oil
3 eggs
1 squash grated
1 giant carrot grated (probably 2 normal ones)
2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
dash of orange juice

salt
cinnamon
allspice




They were pretty labor intensive (you have to grate the squash and carrot) but really good. (Like carrot cake!)

I know it's kinda gross but I LOVE raw cranberries. They are really tart and crunchy.

I adapted me and Shaina's craisin-raisin cookie recipe.


1 cup whole-wheat flour
1 teaspoon baking powder
1/3 cup oil
2/3 cup turbinado sugar
2 eggs
1 teaspoon vanilla
½ cup rolled oats
½ cup dark chocolate chips
handful raw cranberries
dash of sea salt
