Baking up a storm

Friday, I baked cookies. They're loosely based of me and Shaina's craisin raisin cookies.


1 cup whole-wheat flour
1 teaspoon baking powder
1/3 cup peanut butter
2/3 cup turbinado sugar
2 eggs
1 teaspoon vanilla
½ cup rolled oats
½ cup dark chocolate chips
dash of sea salt

350 degrees, 15 min in oven 

(note that the amounts are approximate)

No pictures, these were gone fast.

Saturday, I realized I had some marshmallows to use. I made "smore bars"
The base was a CCK recipe for snickerdoodles.

Then i added a layer of dark chocolate chips and a layer of of marshmallows.  
So TONIGHT, I baked THREE things. You would think I'm nervous for something? Or maybe I'm trying to stuff all solid food in my mouth within the next week!?

Two things are for Nancy and Bill's (in the Skrabalak lab) birthdays. A CCK cookie pie and brownies (I'm nervous about people liking the pie so I figured I'd bake two things).


And I baked some beautiful bright pink beet muffins. They're loosely based off Hannah's beet muffin recipe.
1 1/2 cups pureed cooked beets ( I roasted mine)
1 1/2 cups whole wheat flour
1 cup turbinado sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1 egg
1/2 cup soy milk (ish)
1 banana
